Christmas Tree Ruffle Verticle Layer Cake

Merry Christmas Everyone! And more importantly, happy birthday Jesus!
I made this easy color-blocked ruffle Christmas tree cake, inspired by I am Baker's Christmas tree cake.
I used two cakes, a red cake and a green cake to create this vertical layered square effect. It's really pretty easy and creates a nice surprise when you cut into the cake.

'Stashing Through the Snow Chocolate Hot Cocoa Cake

So, I wanted to think of something really creative and easy to enter into the Creative Holiday Recipe Contest hosted by Confessions of a Cookbook Queen and Cookies and Cups. Not that I could ever measure up to Kristan and Shelly, let's be honest. (What? It's not weird that I feel like I'm best friends with them but they don't know who I am. I'm allowed to use their real names. There's no Internet law. Wait, what? There is? And that's  related to the field of law I want to go into? I'm supposed to be a real lawyer someday? Hmm....).
Anyways! Have you seen those little ornaments on Pinterest that say "stashing through the snow"? This is where I got the idea for this crazy cake. Mustaches are totally in right now and I've been dying for a reason to make a mustache cake. (Weird, I know, but have you seen the mustache bash parties? They look awesome.)

White Chocolate Ganache Volleyball Cupcakes

White chocolate ganache dipped volleyball cupcakes. What could be better?
I made these big and little cupcakes for our club volleyball meet the team last Saturday. No one really said anything, but I thought they were adorable. They must have been good though, because they were gone by the end of the meeting!

Not So Vegan Chocolate Cupcake Recipe

This recipe is a spin-off to my classic chocolate cupcake recipe that just happens to be vegan. I decided to see what happens if I substituted butter for the oil and milk for the water, thinking they'd be a bit richer and more dense. While the cupcakes were just as good as the other recipe, I honestly didn't see a difference in the two recipes. Use whichever one works best for you!

Don't You Love Staples?

I sure do. Maybe it's because I used to work there, but I always find the cutest things at Staples.
Like this cupcake tape dispenser. How cute! And it's only $6.99. Unfortunately, on a law school budget, that's about $5.99 too much. But seriously, what more could a working girl ask for? It'd make a great stocking stuffer for any of you looking for a last minute gift!

Chocolate (I can't believe there's no butter) Vegan Cupcake Recipe

You won't believe this chocolate cupcake recipe is vegan.
It has a wonderful moist chocolaty flavor and is my go-to chocolate cupcake recipe.

Zebra Cookies

These zebra cookies didn't quite turn out like I had wanted. I'm determined to revisit them at some point however, because I really do think they have potential.

Chocolate Crinkle Turkey Cookies

These chocolate crinkle turkey cookies were an attempt to pull off using the holiday stencils. I thought using a different medium might help but the powdered sugar was no more forgiving than the frosting from the original Thanksgiving cookie post.

Thanksgiving Cookies

Sorry for the delay in Thanksgiving posts. Blogger decided that I post too many pictures and let me know I was over my 1GB limit and wouldn't let me post unless I bought more space. Funny how everything is only free up to a point, right?
These cut-out cookies were frosted with a meringue (think toasted marshmallow) and I attempted to frost them using a stencil. It wasn't exactly a huge success.

Marshmallow Flavors

I saw these marshmallows at Wal-Mart the other day and just had to buy them. Anyone who knows me knows that I love marshmallows, and caramel swirled marshmallows? Who could resist!

White Chocolate Peanut Butter Saltine Crackers

Once again, sometimes you have to get creative when you're craving something sweet. This idea was combined from two recipes I've seen but never tried: One, a chocolate bark that used broken pieces of saltines to add a salty crust, and the other a recipe where you frost Ritz crackers with peanut butter and dip them in white chocolate.
These little "sandwiches" are so good, and rich enough that you only want to eat one or two. Unless you have a glass of milk, then you could eat them for DAYS.

Cinnamon Sugar Pretzels

Being in law school, I never really have a lot of food in the house. I'm not exactly sure if that's because I'm poor or because I don't have time to cook. Maybe a bit of both? Anyways, sometimes when you're craving something sweet for dessert, you have to get a bit creative. But as long as you have a half-eaten bag of pretzels, cinnamon, sugar, and oil/butter you can whip up this sweet and salty snack in less than 20 minutes. You're welcome.

Pumpkin Rice Crispies

This post if for my "favorite sister" Stephanie, who informed me today that it is NOVEMBER and Halloween was two weeks ago! (It's crazy how fast this year is going...) But these pumpkins are fall, right? And it's not technically winter until December, right? No?
Okay, I know these pumpkins are a hott mess. I made them with leftover rice crispies from the candy corn rice crispie treats and I just wanted to see how it would look. I only made a few (they were just for me). They aren't great, but you get the idea.

Halloween Kit Cupcakes

Here are some of the other Halloween cupcakes I made when I made the spiderweb cupcakes. The white chocolate spiderwebs were pretty but took time and I didn't know if they would turn out okay or if they would break.
I cheated and used these cute cupcake picks. But look at that tail, can you blame me?

Pumpkin Pretzels

Just in time to wrap up fall, here are some super easy white chocolate covered "pumpkin" pretzels.
These were made with some leftover white chocolate I had and would look much better with actual orange candy melts. (Unless coral pumpkins are your thing).

DIY Cupcake or Cake Stands

Cupcake/cake stands are so easy to make yourself and can be so unique and cute. I saw these spiderweb plates and knew I wanted to make a Halloween cupcake stand. I'm always on the lookout for cheap plastic plates. Next I'm thinking I might try two cupcake plates. Do you think it would be an overdose of cupcakes or would it look cute?

Spiderweb Chocolate Ganache Cupcakes

These spiderweb cupcakes look so impressive but require very little skill. I took them to a Halloween party/benefit this weekend and they were a huge hit.
People were shocked to find out the web was edible and white chocolate and the ganache stayed shiny and looked much more professional then a swirl of sugary-sweet frosting.

Cupcake Costume

For Halloween this year I decided to, of course, be a cupcake. (Please excuse the embarrassing goofy mirror-pictures I had to take so that you could see my full outfit.)

Candy Corn Cookies

These candy corn cookies seemed like a great idea in my head. What could be better than rolling a cookie in bits of candy corn?
They didn't exactly turn out how I had expected and weren't nearly as pretty baked as they were raw, however the final result was just as delicious as I had hoped and they were definitely worth the mess that they made.

Pizza Cupcakes

Lately, I've seen a lot of food cupcakes. Pizza, lasagna, chicken pot-pies, mac and cheese--you name it, there's a cupcake recipe for it on Pinterest. But why not? They're so cute and a really nice, small portion and cupcakes are quite the trend. (Although, I'm predicting a shift to cookies. Or at least I think I'm going to shift to cookies. Cupcakes get messy to eat, are hard to transport, and I have YET to a find a cupcake frosting recipe that I like. If anyone has the recipe for a smooth silky buttercream that's easily piped but stands up beautifully on a cupcake, please let me know.) But anyways, I plan on making a cultural switch to cookies. But not royal icing cookies which are beautiful but don't taste that great. I mean unique, wholesome, old-school, delicious cookies with crazy recipes. I'm dreaming up a s'mores cookie and a candy corn cookie at the moment, so look for those posts in the future.
But enough of that! Lets get back to these pizza cupcakes. I made these as a little 3pm early dinner snack for Will and I. He was stopping by on his way to Kentucky and didn't want to stay for dinner but had a long drive ahead of him and these were perfect. I love the small portions.

Candy Corn Rice Crispie Treats

These candy corn rice crispie treats are so easy and yet so cute.
**But after making and posting these, I realized that candy corn traditionally have yellow tops followed by an orange middle section and a white tip! Yellow-Orange-White, not Orange-Yellow-White like I did. For some reason the ombre-colors made more sense to me and I didn't even think about looking to make sure it was correct. Whoops! (Sidenote, I wonder why they did the colors out of order? Anyone know?)

Glaze Flood Cookies

These glaze cookies are a bit harder to decorate but taste much better than a normal royal icing cookie. (Which sometime hurt my teeth for some reason! Anyone else have that problem?)
Not that pretty of a plate of cookies, but at least the glaze is a pretty color.

Swiss Meringue Amazing Vegan Chocolate Cupcakes

Disclaimer: These cupcakes are only half vegan! The frosting is NOT vegan. But it's delicious, and this chocolate cupcake recipe is the absolute best I've ever eaten.
They're cute, right? Almost like little ice cream swirls.

Whoopie Pies

I had never really had a whoopie pie until I made these. Is it a Southern thing?
These are so delicious, I would make them for anything. And they'd be great for events because they're easy to eat. Sometimes cupcakes get a bit messy, you know? These would be perfect for Fourth of July parties.

Pink Valentines Day Cupcakes and Crinkle Cookies

I have good news and bad news. The good news is this post is a twofer! TWO delicious and super easy desserts. The bad news is this post is super old. Like Valentine's Day old. (Embarrassing, I know!). Good thing pictures can't go stale.
Strawberry cupcakes and strawberry crinkle cookies, using only FOUR ingredients. TWO desserts, FOUR ingredients. You're welcome. Could this get an easier?

Ultimate Chocolate Chip Cookie Cookie Dough Lorax Cupcakes

Even just seeing the commercials, I already love the Lorax.
Dr. Seuss has a way of doing that, doesn't he? And honestly, I think I would love anything when it's on top of an ultimate chocolate chip cookie cookie dough cupcake. These are the kind of cupcakes that I dream about when on a diet, they're THAT good.

Peanut Blossom Cookies

One of my all time favorite cookies are peanut blossoms. (Especially pink peanut blossoms!)
I can't wait to make some using those Dove chocolate hearts, I saw some on Pinterest and they were really cute.

Cinnamon Roll Cupcakes

Okay, so these aren't really cupcakes. They're cinnamon rolls that I baked in cupcake liners to make them cuter and easier to eat.
