Cut-out Cookie of the Month, January: Stunning Silver Snowflake Cookies

These silver snowflake cookies are simple and yet stunning. (Alliteration anyone? Ha.)
This is the first "cut-out cookie of the month" post, explained HERE.
You often see tons of snowflake cookies around this time of year, however the silver sheen really gives these simple cut-outs that extra something special.

Royal Icing Finally Done Right (Meringue Powder Recipe)

I've done a lot of experimenting with royal icing. I've tried cooked egg whites, corn syrup, the meringue powder recipe from Wilton, from Sugarbelle, from Bake at 350. And honestly, I hated them all. They hurt your teeth, they were lemony and sour, they had a weird flavor, and they weren't sweet enough. Finally, after lots of trial and error, I have created a recipe that works for me. It's sweet, it doesn't hurt your teeth, and it doesn't have that weird meringue powder lemon taste. Do whatever works for you, but here's the recipe that works for me.

Ingredients:
1 T. meringue powder (I used Wilton's)
3 T. water
2 c. powdered sugar
Mix and enjoy.

Cut-out Cookie Recipe

Here's the cut-out cookie recipe that I used for my recent posts. I adapted the recipe from Sweet Sugarbelle, found HERE. Bakerella also uses her sugar cookie recipe btw. It's that good. This recipe is amazing for multiple reasons. First, it has super easy ingredients that you're almost guaranteed to have. (If the only guarantees in life weren't death and taxes.) Second, there's not a ton of flour! So many cut-out cookies are so doused in flour that it's all you taste. This dough is sweet and sugary, super easy to roll out, and has a nice crumbly texture that doesn't require ANY flour when you roll it out. Shocking, I know. Okay, enough chit chat, here you go:

Ingredients:
3 c. flour
2 tsp. baking powder
1 c. sugar
2 sticks of butter
1 egg
1 1/2 tsp. vanilla
Bake at 350 for 10-12 minutes.

 For Christmas my wonderful parents got me this stunningly beautiful cookie cutter set from Crate and Barrel with a different cookie cutter for each of the 12 months.

Egg Croissant Breakfast Cupcakes


The breakfast cupcakes were so good that my stomach is grumbling just posting these pictures. Can I call these cupcakes? My first day in Advocacy class (a law school class basically teaching you how to argue and debate orally and in writing) my partner Lindsey and I debated if muffins were considered a cupcake. I said muffins should absolutely be considered a cupcake and it's completely wrong that they are discriminated against just because they're ugly. What do you think? Is anything baked in a cupcake tin a cupcake? Or does it have to be sweet/have frosting/be baked in a cupcake liner? For the sake of argument I'm calling pretty much anything a cupcake just so that I can blog about it. Deal?
Anyways, these are super quick and easy, they bake in 10-15 minutes, and they would be absolutely wonderful to make if you needed to make breakfast for a group of people. Or a group of one. There's no judgement here. 
Plus these little puppies are so versatile that they would be good with just about anything mixed in--bacon, ham, sausage, spinach--anything that might consider putting in an omelet (which really is ANYTHING these days). I put chopped broccoli and cheese in mine and was wishing that I had some pieces of ham to throw in. Guess I'll just have to make them again--oh darn!

Black Licorice Chocolate Anise Gluten-Free Cupcakes

Happy Birthday Mom!
 
I made these black licorice chocolate anise cupcakes for my mom's birthday. She absolutely loves black licorice, but is now gluten-free and can't eat licorice without getting sick. (Which sometimes still doesn't stop her.) She said theses were the best gluten-free cupcakes that she's had, and I was really impressed with the (doctored) recipe that I used. I can't wait to try it with chocolate cupcakes so that I can actually enjoy eating these.
 
They tasted exactly like a NyQuil cupcake. But don't worry, no cough syrup was used in the making of these cupcakes.

Volleyball Cake

 Since my 'staching through the snow' cake only used one 9" round cake, I had an extra cake to decorate. Decorating a round cake can be slightly difficult, and instead of trying to be creative I decided to recreate my volleyball cupcakes in cake form.
I think this was the best frosting recipe that I have ever made.

Target Cupcake Gift Wrap

Found this cupcake wrapping paper in the $1 bins at Target. Thought it was too cute to pass up, even though I'm not sure what to use it for yet. Beware if you do venture out though, the after-Christmas crazies are everywhere and they are lethal! Happy shopping!  :)
